Winemaker Update

This dispatch just received from The Undisclosed Location:

“The 2010 Sangiovese was broken down into two ferments – a stainless steel tank and a reserve bin. The plan is for an extended maceration of the smaller reserve batch and a more traditional tank ferment with the other. Lots of fantastic tannins on both counts. The color is ruby red, almost that of Pinot. The nose is all flowers and bing cherry. Tons of structure on the palate. We had an extremely healthy ferment and went VERY gently by pumping it over twice a day, instead of punch downs. We are in negative brix with both ferments. We will press the tank tomorrow and the reserve bin later in the week. This was gorgeous fruit and easily a favorite project this vintage…”
